10 BBQ Meat Ideas Beyond Burgers and Sausages

Burgers and sausages will always have their place, but if that's all that ever hits your grill, you're missing out. Here are ten BBQ meat ideas to make your next barbecue a bit more interesting.

  1. Marinated chicken thighs — juicier and more forgiving than breast, and they take a marinade beautifully.
  2. Lamb koftas — spiced minced lamb pressed onto skewers. Fast, flavourful, and a bit different.
  3. Spatchcock chicken — a whole bird flattened out so it cooks evenly over indirect heat. A proper centrepiece.
  4. Beef short ribs — low and slow until they're sticky and tender. Serious barbecue.
  5. Pork ribs — racks cooked gently then glazed. Everyone's favourite.
  6. Gammon steaks — quick, meaty and unexpected on a grill. Try them with a pineapple ring.
  7. Lamb chops — quick over direct heat, hard to beat with a bit of char.
  8. Steak skewers — chunks of rump threaded with peppers and onions. Feeds a crowd from not much meat.
  9. Pulled pork — a shoulder cooked low and slow, then shredded into buns.
  10. A tomahawk or big sharing steak — seared then rested and sliced for the table. Pure theatre.

Mix quick and slow

The best spreads pair a couple of these slower showpieces with fast-cooking bits so people can eat while the big stuff finishes. Variety is what makes a barbecue memorable.
