The turkey's the star on the day, but the leftovers might be the best bit. Here are five ways to turn cold turkey into meals you'll actually look forward to, no more dry sandwiches on repeat.
1. The ultimate turkey sandwich
Let's start with the classic, done properly: good bread, a smear of cranberry, a layer of stuffing, turkey, a little mayo and a grind of pepper. Toast it if you're feeling fancy. Unbeatable.
2. Turkey and leek pie
Soften leeks in butter, stir in shredded turkey, a splash of cream and any leftover gravy, top with pastry and bake until golden. Comfort food that hides a multitude of leftovers.
3. Turkey curry
The Boxing Day tradition for a reason. Fry onions, garlic and curry paste, add stock and coconut milk, then the turkey to warm through. Serve with rice, done.
4. Turkey, ham and cheese toastie
Got leftover ham too? Layer both with cheese between buttered bread and griddle until molten. A festive croque monsieur.
5. Turkey soup
Don't bin the carcass, simmer it with veg and herbs for a stock, then add shredded turkey, noodles or barley and whatever veg needs using up. The most satisfying way to squeeze every last bit out of the bird.
A note on leftovers
Cool leftover turkey quickly, keep it covered in the fridge and use within a couple of days, or freeze it. Reheat until piping hot right through.
