Slow Cooker Beef Brisket

This is the lazy way to spectacular brisket, no smoker, no standing over a barbecue, just a slow cooker doing the hard work while you get on with your day. You'll come home to meltingly tender beef and a rich gravy. Serves about 6.

Ingredients

  • 1.5kg beef brisket
  • 2 tbsp oil
  • 2 onions, sliced
  • 3 garlic cloves, crushed
  • 2 tbsp tomato purée
  • 1 tbsp smoked paprika
  • 1 tbsp brown sugar
  • 500ml beef stock
  • 2 tbsp Worcestershire sauce
  • Salt and pepper

Method

  1. Season and sear. Pat the brisket dry, season well, and brown it all over in the oil in a hot pan. Don't skip this, it's where a lot of the flavour comes from. Lift into the slow cooker.
  2. Soften the onions. In the same pan, cook the onions until soft, add the garlic, tomato purée, paprika and sugar, and stir for a minute.
  3. Deglaze. Pour in the stock and Worcestershire sauce, scrape up all the sticky bits, and bring to a simmer.
  4. Slow cook. Pour the sauce over the brisket. Cover and cook on low for 8 hours (or high for about 5), until pull-apart tender.
  5. Rest and shred. Lift out the brisket, rest for 10 minutes, then slice or shred. Skim the sauce and reduce it on the hob if you'd like it thicker.

Serve with

Mash and greens, or piled into rolls with the gravy for the best sandwiches going.
